
Low Carb Pizza Casserole

I love pizza! When you live in New York, you have some of the best pizza anywhere. So it is difficult to have to slow down on pizza because pizza is high in carbohydrates.
This pizza casserole is low in carbohydrates, gluten free and absolutely delicious. My casserole has spinach in it. Spinach is an excellent source of vitamin K, vitamin A (in the form of carotenoids), manganese, folate, magnesium, iron, copper, vitamin B2, vitamin B6, vitamin E, calcium, potassium and vitamin C. It is a very good source of dietary fiber, phosphorus, vitamin B1, zinc, protein, and choline.
You can use any vegetables or meats that you like or nothing at all. This is a very easy and simple recipe so for the time it takes to call out for pizza, you can whip this up and be eating in no time. Plus, you'll know exactly what you're eating.

In a saucepan, combine pizza sauce and tomatoes with seasoning and simmer for about 15 minutes. While the sauce simmers, brown your meat and add some seasonings.




Once your meat is brown, drain your meat and add your spinach to the same pan. Cook the spinach for a minute or so until it's wilted and some of the water is out. Spoon the spinach onto a paper towel to take out as much water as possible. Now, assemble your pizza starting with a little pizza sauce and using the meat as your crust. Then add as much spinach, sauce, and pepperoni as you would like. Bake in the oven at 375F for 15 minutes and then turn the oven to 400F for another 5 minutes or until the cheese is melted and brown.
